Description
Maui Winter Honey…is made by the bees during the winter months between December and April. During this time the bees collect nectar from the large forests of Eucalyptus on the North West slopes of Haleakala. They also visit many other secondary sources such as blackberry, glycine, Haole koa, Avocado, Silky Oak and Ohia Lehua. We harvest in April. Our winter honey is darker in color, and its flavor is complex with tones of butterscotch and caramel and heavier floral notes.
